(Handley once stayed on campus past 7pm so that I could retake a lab that I had to miss for a SMAD event. It was hard (the first 2/3s of the class are chemistry-based and I mentally blocked most of my high school chem experience it was so bad) but I had Nash and Handley as professors and they truly want their students to succeed so they go above and beyond if you ask them for help. (He's also super funny and engaging, so I regret not going to class more just to hear him lecture!) I also took ISAT 112 (Environmental Issues in Science and Technology) purely because the lab is included and it fit my schedule best that semester. I was able to memorize the info to get through the classes, and I'm sure it would have been even easier if I went to class. I took ANTH 196 (Biological Anthropology) with Lawler, and it was pretty easy for me! I barely went to class and made great study guides from his lecture notes/slides and pulled a B+ since the whole class is only graded on exams. It really depends on your strengths for which class will be easiest, as well as what fits your schedule! Personally, I was a SMAD major with minors in WRTC and political science, and I really struggled with math and science my entire life, BUT I'm a good test-taker and researcher/writer. Cluster 5 is wellness, so you'll take either a health or kinesiology (exercise) class and then something like intro to psychology or sociology. Cluster 4 is some kind of America-oriented class, so your options are basically American government or history, and then a class that has a global focus, like cultural anthropology, geology, or intro to africana studies (which I've taken and actually really recommend! As a white person who hasn't been exposed to much Black culture, it was really informative and eye-opening!). Idk about music, but some majors have a required schedule that students have to maintain to stay on track for graduation. These 3 have to be completed your freshman year, all the other clusters can be completed either at any time or on the schedule your major dictates, if they do so.

Cluster one is critical thinking, communication (basically public speaking/how to research and give good presentations), and an information literacy test you take on your own time before a certain deadline. Yes, you'll likely only have to take one math! Just be aware some of the science/lab options have math pre-reqs, so it will limit what science options you have for your other gen ed requirements.
